Supervise and oversee all activities concerning Kitchen & BOH operations and personnel for Larkspur Restaurant. Responsible for ensuring an efficient quality finished product throughout the restaurant operation. Responsible for keeping all Larkspur Restaurant costs within budget.

Core Tasks and Responsibilities:
•Routinely taste food items to insure consistency and conformance to recipes and standards of appearance.
•Work with executive chef to develop all Larkspur Restaurant and Market lunch, après ski, and dinner menus.
•Constantly evaluate menu for quality, consistency and trueness to concept.
•With other Sous Chefs create and maintain menu descriptions for Larkspur Restaurant.
•Research new techniques of cooking as well as new products.
•Oversee the quality and consistency in the market and work with Sous Chefs to develop market menus.
•Assist the Kitchen Manager in overseeing the prep cooks.
•Take time to give special attention to special guests and guests with special needs.
•Train kitchen employees in all menu items and food production principles, philosophies and practices, by creating and using accurate menu descriptions, kitchen notes and daily BOH director notes.
•Control food costs by maintaining product storage requirements, daily work sheets, standardized recipes, and waste control procedures.
•Maintain knowledge of local producers and general industry trends.
•Coordinate all BOH purchases, prep needs and stewarding needs with Kitchen Manager.
Step in as acting chef in any position necessary.
•Use daily kitchen notes and e-mail to communicate among the team and maintain open lines of communication between front of the house and back of the house.
•Work with FOH directors to execute menu changes, specials, price changes, and BOH issues that may affect service.
•Responsible for attendance at daily line up meetings; on time, well informed, ready to speak, educate and inspire, with specials in hand and ready to answer questions.
•Educate front of the house personnel in product awareness and cultivate long-term food knowledge.
•Lead by example and motivate through positive reinforcement.
Be firm, fair and consistent when involved with employee issues..
•Establish role as a spokesperson for Larkspur Restaurant and Market within the community.

Qualifications

• Must have 2+ years of kitchen management experience in a full service, moderate to high volume restaurant.
• Solid track record of success in previous assignments demonstrating upward career tracking
• Strong communication skills
• Strong leadership skills
• Culinary school background a plus
• Ability to speak and understand Spanish a plus
• Able to work ten hour-plus shifts plus ability to stand, sit or walk for extended periods of time
• Able to grasp, lift and/or carry up to 50 lbs as needed
• Finger/hand dexterity to operate kitchen machinery, knives, etc
• Must possess hearing, visual and sensory abilities to observe and detect emergency situations; also to distinguish product, taste, texture, temperature and presentation and preparation
